Instructions

  1. Prepare Mushrooms: Wash and soak dried shiitake mushrooms in warm water. Trim off the ends of seafood and shimeji mushrooms and soak them in water.
  2. Cut Ingredients: Cut the king oyster mushroom, carrot, ginger, garlic, and green onion. Cut the tofu into thin rectangular slices and dry them with a paper towel.
  3. Cook Tofu: Heat oil in a wok on high, then add the tofu. After pan-frying both sides, remove them from the wok.
  4. Sauté Vegetables: Add the ginger and garlic to the wok, followed by the shiitake mushrooms and carrots, then the rest of the mushrooms.
  5. Combine in Clay Pot: Transfer everything to a clay pot. Add the mushroom soaking liquid and water, then cover.
  6. Season: Season with salt, sugar, vegetarian oyster sauce, light soy sauce, and dark soy sauce. Mix well.
  7. Add Tofu and Thicken Sauce: Add the tofu slices and mix in cornstarch slurry to thicken the sauce.
  8. Final Touches: Add sesame oil and sprinkle on some green onions before serving.
