Prepare Ingredients: Cut ginger and lettuce into strips. Cube the chicken and marinate with oyster sauce, white pepper, cornstarch, and water. Prepare the salted fish by removing the head and dorsal fins, rinsing, drying, deboning, and cutting into small pieces.
Prepare Eggs: Crack two eggs into a bowl and fluff.
Stir Fry Eggs: Add oil to a hot wok, then add the eggs. Stir fry quickly and remove.
Cook Chicken: In the same wok, add the chicken and cook until mostly done, then remove.
Stir Fry Ginger and Salted Fish: Add ginger and salted fish to the wok and stir fry.
Combine Ingredients: Add the cooked rice, then the eggs, chicken, green onions, and some white pepper to the wok. Stir well.
