Ingredients

  1. extra virgin olive oil - 1 cup (240 ml) (preferably Spanish)
  2. potatoes - 1 kg (2 1/4 lb or about four medium-sized) (Yukon Golds or any preferred type, peeled, washed, and patted dry)
  3. onions - 3 (medium-sized, yellow, red, or sweet onions)
  4. garlic cloves - 6
  5. sweet smoked Spanish paprika - 1/2 teaspoon (1.25 grams)

  7. freshly cracked black pepper - watch the video to see (to taste)
  8. fresh parsley - watch the video to see (for garnish)

Instructions

  1. Prepare the Potatoes: Cut the potatoes into bite-sized pieces, about 2 cm (3/4 of an inch).
  2. Fry the Potatoes: Heat a large fry pan over medium heat and add the extra virgin olive oil. Once hot, add the chopped potatoes, ensuring they're all coated in the oil. Fry, stirring every 3 to 4 minutes, for 25 to 30 minutes until golden and cooked through.
  3. Prepare Onions and Garlic: While the potatoes are frying, thinly slice the onions and garlic.
  4. Sauté Onions and Garlic: Remove the fried potatoes and reserve the oil. Using the same pan, heat 1/4 cup of the reserved olive oil over medium heat. Add the sliced onions and garlic, sautéing until translucent and lightly browned, about 10 minutes.
  5. Combine and Season: Add the fried potatoes back to the pan with the onions and garlic. Season with the sweet smoked paprika, sea salt, and black pepper. Mix well.
  6. Serve: Remove from heat, transfer to a serving dish, and garnish with fresh parsley.
