Prepare Onions and Garlic: While the potatoes are frying, thinly slice the onions and garlic.
Sauté Onions and Garlic: Remove the fried potatoes and reserve the oil. Using the same pan, heat 1/4 cup of the reserved olive oil over medium heat. Add the sliced onions and garlic, sautéing until translucent and lightly browned, about 10 minutes.
Combine and Season: Add the fried potatoes back to the pan with the onions and garlic. Season with the sweet smoked paprika, sea salt, and black pepper. Mix well.
Serve: Remove from heat, transfer to a serving dish, and garnish with fresh parsley.
