Instructions

  1. Prepare Fish: Cut white fish into pieces and season both sides with salt and pepper to taste.
  2. Make Egg Mixture: Mix buttermilk with a large egg. If no buttermilk, substitute by mixing whole milk with a little lemon juice.
  3. Prepare Breading Mix: Combine wheat flour, coarse cornmeal, seafood seasoning, garlic powder, cayenne pepper (optional), baking soda, and baking powder. Stir well.
  4. Coat Fish with Flour: Dredge each piece of fish in wheat flour to help egg mixture adhere better.
  5. Dip Fish in Egg Mixture: Using a fork for ease and cleanliness, dip each floured fish piece into the egg mixture.
  6. Coat Fish with Breading: Thoroughly coat each fish piece with the breading mix to ensure a super crispy crust.
