Ingredients

  2. garlic chives (Chinese chives) - watch the video to see (cut into small pieces)
  3. white pepper powder - 1/4 teaspoon
  4. oil - watch the video to see (for cooking)

Instructions

  1. Prepare the Ingredients: Wash the chives thoroughly and cut them into small pieces. Crack the eggs into a large bowl.
  2. Season the Eggs: Add 1/4 teaspoon of white pepper powder to the eggs and beat them until well mixed.
  3. Cook the Chives: Heat oil in a wok over medium heat. Add the chives and cook for about a minute.
  4. Cook the Eggs: Pour the egg mixture into the wok. Let the bottom of the eggs cook for 5 to 10 seconds, then stir for 15 seconds until the bottom has just about set. Flip the eggs over and cook for another 40 seconds, then turn off the heat.
  5. Serve: To prevent overcooking, transfer the eggs to a plate as soon as they're done to your liking.
