Prepare Tortillas: Cut the tortillas in half to create half moons, and then cut these halves into quarters.
Heat the Oil: Heat neutral oil in a deep frying pan or pot to 350-375°F. If you don't have a thermometer, you can test the oil's temperature by adding a small piece of tortilla; if it bubbles vigorously, the oil is hot enough.
Fry the Tortillas: Fry the tortilla pieces in batches to avoid overcrowding and cooling down the oil. Stir occasionally to prevent sticking. Fry until they are golden brown and crispy.
Season: Immediately after removing the tortillas from the oil, season them with salt. This ensures the salt sticks to the chips.
