Ingredients

  1. eggplant - 3
  2. white part of green onion - 1 piece
  3. sesame seeds - watch the video to see (as needed)
  4. chopped green onion - 2 tbsp (2 tbsp)
  5. cooking oil - 3 cups (3 cups)
  6. soy sauce - 6 tbsp
  7. vegetable stock - 2 cups
  8. unrefined sugar - 1 tsp
  9. vinegar - 1/2 tbsp

Instructions

  1. Prepare Eggplant: Cut the washed eggplants into halves lengthways and score them.
  2. Fry Ingredients: Fry the green onion in heated oil, then quickly fry the eggplant for 10-15 seconds.
  3. Prepare Soy Sauce Brine: Mix soy sauce, vegetable stock, unrefined sugar, and vinegar in a bowl.
  4. Pickle Eggplant: Place the eggplant and green onion in an airtight container, pour the soy sauce brine over them, and let sit in the fridge for 1-2 days.
  5. Serve: Serve with chopped green onions and sesame seeds sprinkled atop.
