Ingredients

  1. piadine - 4 (flatbreads for rolling)
  2. Norwegian salmon fillet - 300 g (skinless and boneless, cut into thin slices for marinating)
  3. Philadelphia cream cheese - 200 g (soft cheese for creamy filling)
  4. lemon juice - 50 g (used for marinade and to prevent avocado browning)
  5. extra virgin olive oil - 60 g (used in marinade and cream)
  6. salt - to taste (for seasoning marinade and cream)
  7. black pepper - to taste (for seasoning marinade and cream)
  8. avocado - 250 g (ripe, sliced thinly)
  9. tomato - 1 piece (sliced, preferably ramato variety)

Instructions

  1. Prepare the marinade: In a bowl, combine lemon juice, extra virgin olive oil, salt, and pepper. Whisk well to mix.
  2. Marinate the salmon: Place the thinly sliced salmon into the marinade and mix well to coat all slices. Refrigerate for 1 hour to allow flavors to develop.
  3. Prepare the avocado: Slice the ripe avocado thinly. To prevent browning, sprinkle a few drops of lemon juice over the slices.
  4. Make the creamy filling: In a bowl, mix Philadelphia cream cheese with lime zest, a drizzle of olive oil, salt, and pepper. Stir until smooth and creamy.
  5. Heat the piadine: Warm each piadina for about 1 minute on each side until heated through.
  6. Assemble the rolls: On each warmed piadina, layer marinated salmon slices, avocado slices, tomato slices, and finally the creamy cheese mixture. Roll the piadina first one way, then the other to form a roll.
