Ingredients

  1. potato - 1 kg (washed)
  2. onion - 1 (good size, chopped)
  3. salt - 1 teaspoon (to taste)
  4. black pepper - 1 teaspoon (to taste)
  5. turmeric - 1 teaspoon (used in fried onions)
  6. cooking oil - watch the video to see (any kind or combination with butter)
  7. butter - watch the video to see (optional, for added flavor)

Instructions

  1. Boil Potatoes: Wash the potatoes and boil them in water for about 35 to 40 minutes or until tender. Test doneness by inserting a fork; if it goes in easily, potatoes are cooked.
  2. Prepare Fried Onions: Chop the onion. Heat a pan and add onions without oil initially to release moisture, then add cooking oil and/or butter. Fry the onions on medium heat until golden brown but not burnt, frequently stirring. Add turmeric and black pepper towards the end of frying. Turn off heat and set aside.
  3. Peel and Mash Potatoes: Drain the boiled potatoes and rinse with cold water. Peel the potatoes once cool enough to handle. Mash the potatoes using a masher, grinder, or fork until smooth.
  4. Mix Ingredients: Add salt and optionally butter to the mashed potatoes. Mix well. Then add the fried onion mixture and combine thoroughly.
  5. Heat and Serve: Place the mixture on very low heat and stir gently until the color and flavors are evenly distributed. Serve warm as a side dish, appetizer, or use as a sandwich filling with accompaniments like tomato and pickled cucumber.
