Instructions
Prepare the Eggplants: Cut the Chinese eggplants into equal sized pieces, using a freshly cut piece as a guide for more even cuts. Slice each piece into 4 smaller pieces lengthwise.
Arrange for Steaming: Place the eggplant pieces on a plate suitable for steaming. Arrange the thicker pieces, especially the heads of the eggplants, on top as they require a longer cooking time due to denser flesh.
Steam: Steam for about 15 minutes, or until the eggplants are soft. Ensure the food is elevated above boiling water and covered during steaming.
