Instructions
Combine Base Ingredients: To a tall jar, add egg yolk, mustard, lemon juice, and a pinch of salt.
Blend: Using an immersion blender at the bottom of the jar, start blending, tilting to one side and slowly moving up to emulsify the oil into the yolk and mustard mixture.
Adjust Consistency: If the mayonnaise is too thick, add a bit of room temperature water to thin it out.
Season: Check the seasoning and adjust if necessary.
Store: Transfer to an airtight container, label, and refrigerate for 3 to 5 days.
