Ingredients

  1. unsalted butter - watch the video to see (a little bit)
  2. water - watch the video to see
  3. salt - watch the video to see (for dough and to taste after frying)
  4. flour - watch the video to see
  5. Comté cheese - 100 grams (100g, grated for inside)
  6. egg - 1
  7. cayenne pepper - watch the video to see (a small amount)
  8. black pepper - watch the video to see (to taste)
  9. London honey - watch the video to see (for drizzling)

Instructions

  1. Prepare the Dough: Start by adding a little bit of unsalted butter, some water, and some salt to a pan and allow that to dissolve. Once melted, add in your flour. Reduce the heat slightly and work the flour, butter, and water until it's nicely broken down and the flour is cooked out of the dough.
  2. Chill the Dough: Take the dough off the heat and let it chill.
  3. Prepare Comté Cheese: Dice a little bit of Comté cheese to have about 100g of grated cheese for the inside of the cheese balls.
  4. Mix Dough with Other Ingredients: Once the dough has chilled, add your egg and give it a really good mix. Add a small amount of cayenne pepper and a generous amount of black pepper.
  5. Form Cheese Balls: Bring in your grated Comté cheese and mix it with the soft dough. Form this mixture into balls and let them rest.
  6. Fry Cheese Balls: Set your fryer to 170°C and place the cheese balls in to fry until they are nice and golden brown.
  7. Serve: Once fried, season with some salt and black pepper, drizzle with London honey, and serve immediately.
