Ingredients

  1. potatoes - 500 g
  2. sunflower oil - 1 l (for frying)
  3. cleaned squid - 500 g
  4. cornflour - 2 tablespoons
  5. water - 100 g
  6. breadcrumbs - 80 g
  7. all-purpose flour - 100 g
  8. salt - to taste
  9. vegan mayonnaise - to serve (Helmans Vegan Magio)
  10. lemon slices - to serve
  11. chopped parsley - to garnish

Instructions

  1. Prepare the potatoes: Clean and cut the potatoes into sticks. Fry in a deep fryer with sunflower oil until golden and crispy. Remove and set aside.
  2. Prepare the squid: Cut the cleaned squid crosswise in half. In a bowl, add cornflour, water, and a pinch of salt, and mix well. In separate containers, have the breadcrumbs and all-purpose flour ready.
  3. Bread the squid: Salt the squid and then coat them first in the all-purpose flour, dip them into the cornflour mixture, and finally coat them with breadcrumbs.
  4. Fry the squid: In batches, fry the breaded squid in hot sunflower oil for 1 to 2 minutes each batch or until they take on a nice color. Remove and drain on absorbent paper.
  5. Serve: Place the fried potatoes on a plate, top with the fried squid, and serve with vegan mayonnaise, lemon slices, and chopped parsley. Add lemon just before eating to maintain the crispiness of the squid.
