Instructions
Prepare Chicken: Remove chicken from packaging and pat dry with paper towels. Season on both sides.
Coat Chicken: Mix all-purpose flour with onion powder and garlic powder. Coat the chicken in this mixture, then dip it in egg wash followed by panko breadcrumbs mixed with thyme. Press firmly to adhere the breadcrumbs and flatten the chicken.
Fry Chicken: Heat avocado oil in a pan over medium-high heat. Carefully lay in the chicken. It should sizzle. Cook for about 3 and 1/2 minutes, then flip. Add a touch more salt for the breadcrumbs and cook another 3 and 1/2 minutes on the other side. Let the chicken rest.
Assemble Sandwich: Spread some deli style mayo and mustard on your choice of bread. Add the chicken and a little pickled cabbage salad. Compress lightly, slice, and enjoy.
