Instructions
Prepare the Fillet: Season center cut fillets all over.
Sear the Meat: Sear the meat for about 2.5 to 3 minutes, ensuring it's still completely raw inside.
Build the Wellington: Layer the herb pancake, blanched spinach, and mushroom duxelles. Add the seared fillet brushed with Dijon mustard and wrapped in parma ham.
Wrap in Puff Pastry: Cover with puff pastry, seal, and apply egg wash.
Bake: Bake at 200 degrees Celsius for 12 minutes until golden.
