Ingredients

  2. garlic cloves - 3 (1 slice for roasting, 2 cloves for blending)
  3. salt - watch the video to see (for seasoning tomatoes before roasting)
  4. olive oil - 1 tablespoon (a drizzle for roasting)
  5. black pepper - watch the video to see (for seasoning tomatoes before roasting)
  6. thyme - 1 small bunch (fresh, for roasting)
  7. apple cider vinegar - 50 grams (for seasoning after blending)
  8. sugar - 30 grams (for seasoning after blending)
  9. water - watch the video to see (optional, to adjust consistency)

Instructions

  1. Prepare Tomatoes: Cut very ripe Italian tomatoes in half and place them on a baking sheet.
  2. Add Seasonings: Place a slice of garlic on top of the tomatoes. Season with salt, olive oil, black pepper, and fresh thyme.
  3. Roast Tomatoes: Bake in the oven at 140ºC for approximately 2 hours until tomatoes are caramelized. If your oven doesn’t reach 140ºC, use the lowest setting but expect longer baking time.
  4. Blend Ingredients: Put the roasted tomatoes and garlic cloves into a blender. Add apple cider vinegar and sugar. Blend until desired consistency is reached.
  5. Adjust Texture: If necessary, add a little water to adjust consistency. For a rustic texture, blend briefly. For a smooth ketchup, blend longer and strain through a sieve.
