Ingredients

  1. coconut - 2 coconuts (whole coconuts, use fresh)
  2. water - about 2 cups (to blend with coconut meat)
  3. coconut water - from 2 coconuts (from the opened coconuts)
  4. ice - watch the video to see (for serving)
  5. espresso shots - 2 shots (for serving)

Instructions

  1. Open the coconuts: Hit the coconuts with a hammer until they open. Save the coconut water.
  2. Remove the coconut meat: Use a coconut tool or a butter knife to remove the meat from the coconut shell.
  3. Rinse the coconut meat: Give the coconut meat a quick rinse to clean it.
  4. Blend the coconut meat: Add the coconut meat to a blender, top off with water and the reserved coconut water. Blend on high speed for about 90 seconds or until slightly lukewarm.
  5. Strain the coconut milk: Pour the blended mixture through a nutmilk bag, cheesecloth, or a clean old shirt to milk out the coconut milk.
  6. Serve with iced coffee: Pour the fresh coconut milk over ice and add a couple shots of espresso. Stir and enjoy.
