Ingredients

  1. avocado oil - 2 cups (or another neutral oil)
  2. garlic - 5 cloves (thinly sliced)
  3. shallots - 2 (large or 4 medium, thinly sliced)
  4. spring onions - 4 (thinly sliced)
  5. ginger - 1 (thumb-sized piece, thinly sliced)
  6. star anise - 2
  7. cinnamon - 1 (1 stick)
  8. cloves - 2 tsp
  9. Szechuan peppercorns - 1 tbsp
  10. Chinese chili flakes - 1/2 cup (or regular chili flakes)
  11. chili powder - 1 tbsp (optional, for extra spiciness)
  12. toasted sesame seeds - 1/4 cup
  13. kosher salt - 2 tsp
  14. white pepper - 2 tsp
  15. MSG - 2 tsp (optional)
  16. Chinese black vinegar - 1 tbsp
  17. soy sauce - 1 tbsp (optional)

Instructions

  1. Toast Spices: Toast cinnamon, star anise, cloves, and Szechuan peppercorns in a dry pan.
  2. Prepare Spice Mixture: Add toasted spices to a heat-proof bowl along with chili flakes, sesame seeds, salt, white pepper, and MSG.
  3. Add Green Onions: Mix in thinly sliced green onions to the spice mixture.
  4. Fry Aromatics: Heat oil to 320°F and fry garlic, ginger, and shallots until golden brown and crispy.
  5. Combine with Spice Mixture: Add the fried aromatics to the spice mixture.
  6. Add Hot Oil: Carefully pour the hot oil over the spice and aromatics mixture.
  7. Final Seasoning: Finish by stirring in Chinese black vinegar and soy sauce.
