Ingredients

  1. mixed seafood (squid, shrimp, clams) - 1 pound (cleaned and chopped)
  2. green onions - 2
  3. green chili pepper - 1
  4. red carrot - 1 tablespoon (for color)
  5. egg - 1
  6. flour - 1/2 cup
  7. potato starch - 1/2 cup (can substitute with flour for a total of 1 cup flour if unavailable)
  8. water - 1/2 cup
  9. fish sauce - 1 tablespoon
  10. salt - 1/4 teaspoon
  11. ground black pepper - 1/2 teaspoon
  12. sesame oil - to taste

Instructions

  1. Prepare the seafood: Clean and chop the seafood into small pieces. For squid, remove the bone and skin, and discard the mouth. For shrimp, remove shells and veins. Clams should be washed and rinsed.
  2. Mix the batter: In a large bowl, combine the chopped seafood, sliced green onions, chopped green chili pepper, grated carrot, egg, flour, potato starch, water, fish sauce, salt, ground black pepper, and sesame oil. Mix well.
  3. Cook the pancake: Heat oil in a pan over medium heat. Scoop the batter into the pan and spread it into a round pancake shape. Cook until the bottom is crispy and golden, then flip over and cook the other side. Each pancake takes about 5-6 minutes to cook.
  4. Serve: Serve the pancake hot as a side dish with rice.
