Instructions
Prepare Asparagus: Marinate both white and green asparagus in extra virgin olive oil, salt, fresh ground black pepper, and a small amount of sugar. Place in the large basket of the air fryer and cook for 14 minutes at 200 degrees Celsius. Once cooled, cut the asparagus into small pieces at a slant and mix with fresh lemon zest.
Make Bread Croutons: Cut day-old (preferably sourdough) bread into small cubes and toss with extra virgin olive oil and salt. Place in the small drawer of the air fryer and cook for 12 minutes at 180 degrees Celsius.
Prepare Lemon Mayo: Blend egg yolks, 1 teaspoon of salt, lemon juice from 1 lemon, and 1/2 tablespoon of mustard with a hand blender until creamy. Gradually add neutral oil while continuing to blend until the mayo reaches the desired consistency.
Assemble the Dish: On a plate, arrange a clean base followed by three good heaps of grilled asparagus, bread croutons, and a generous dollop of lemon mayo. Garnish with ramsons.
