Ingredients

  1. chicken bones - 3 kg (roasted)
  2. chicken feet - 500 g (roasted)
  3. onion - 1 large (sliced)
  4. carrot - 3 (roughly chopped)
  5. celery sticks - 3 (roughly chopped)
  6. leek - 1 (sliced)
  7. bay leaves - 2
  8. thyme sprigs - 10 g
  9. rosemary - 5 g
  10. parsley - 7 g
  11. black peppercorns - 7 g
  12. neutral oil - 10 g
  13. cold water - 8 litres

Instructions

  1. Prepare Ingredients: Gather and prepare all ingredients as listed.
  2. Roast Bones and Feet: Roast chicken bones and feet until golden.
  3. Sweat Vegetables: In a large pot, sweat onions, carrots, celery, and leeks in neutral oil.
  4. Combine Ingredients: Add roasted bones and feet to the pot along with herbs, peppercorns, and water.
  5. Cook: Bring to a boil and simmer for 2 to 3 hours, skimming off impurities.
  6. Strain: Strain the stock through a fine sieve or muslin cloth to remove solids.
