Ingredients

  1. sabudana (sago) - watch the video to see (fried)
  2. peanuts - watch the video to see (toasted)
  3. green chillies - watch the video to see (fried)
  4. curry leaves - watch the video to see (fried)
  5. mint leaves - watch the video to see (fresh)
  6. coriander leaves - watch the video to see (fresh)
  7. spicy chilli - watch the video to see (added for heat)
  8. curd (yogurt) - 1 tablespoon (for grinding and mixing)

Instructions

  1. Toast peanuts and fry chillies: Toast the peanuts until golden and fry the green chillies along with curry leaves until aromatic. Remove from heat.
  2. Prepare chutney base: Add the toasted peanuts, fried chillies, curry leaves, fresh mint, coriander, and spicy chilli to a grinder.
  3. Grind ingredients: Add about 1 tablespoon of curd to the grinder and grind all ingredients to a fine paste. The color may vary but the flavor will be excellent.
  4. Serve: Serve the flavored curd chutney alongside Sabudana or as a condiment with other dishes.
