Instructions
Prepare the chicken: Drain out any liquid from the whole chicken and pat it dry thoroughly with paper towels.
Season the chicken: Coat the chicken with oil and generously season it all over with your preferred seasoning blend.
Refrigerate overnight: Place the seasoned chicken in the refrigerator overnight to allow the flavors to penetrate deeply.
Initial roasting: Preheat the oven to 400°F (204°C) and roast the chicken for 10 minutes.
Reduce heat and continue roasting: Lower the oven temperature to 350°F (177°C) and continue roasting until the internal temperature of the breast reaches 165°F (74°C).
Rest the chicken: Remove the chicken from the oven and let it rest for 15 minutes before slicing.
Serve: Slice the whole breast and serve to your guests.
