Ingredients

  1. butter - 150g (unsalted, 150g)
  2. lemon - 1 (zest of one, plus half juiced)
  3. garlic - 1 large or 2 small (one large clove or two small ones, minced)
  4. black pepper - to taste (to taste)
  5. salt - pinch (pinch, adjust if using salted butter)
  6. thyme - 1 bunch (fresh, a small bunch)
  7. olive oil - as needed (for coating)

Instructions

  1. Prepare Butter Mixture: Mix softened butter with lemon zest, minced garlic, black pepper, salt, and chopped thyme.
  2. Prepare Chicken: Stuff the butter mixture under the skin of the chicken breast and over the legs. Place lemon halves and thyme inside the cavity.
  3. Truss and Season: Truss the chicken, coat with olive oil, and season with salt.
  4. Roast: Roast in a preheated fan-forced oven at 200°C (or 220°C without fan) until the internal temperature reaches at least 74°C, approximately 57 minutes.
