thyme - 1 bunch (fresh, a small bunch)

Instructions
Prepare Butter Mixture: Mix softened butter with lemon zest, minced garlic, black pepper, salt, and chopped thyme.
Prepare Chicken: Stuff the butter mixture under the skin of the chicken breast and over the legs. Place lemon halves and thyme inside the cavity.
Truss and Season: Truss the chicken, coat with olive oil, and season with salt.
Roast: Roast in a preheated fan-forced oven at 200°C (or 220°C without fan) until the internal temperature reaches at least 74°C, approximately 57 minutes.
