Ingredients

  1. shallots - watch the video to see (roughly cut)
  2. thyme - watch the video to see (fresh sprigs)
  3. bay leaf - watch the video to see (whole)
  4. garlic - watch the video to see (whole cloves)
  5. red wine - watch the video to see (to reduce in pan)
  6. dark chicken stock - 250 ml (liquid stock)
  7. reduced beef stock - 600 ml (reduced liquid stock)
  8. butter - a few cubes (cold cubes to emulsify and finish sauce)

Instructions

  1. Caramelize Shallots and Beef: Roughly cut shallots and place them in a pan. Add thyme and bay leaf. Cook on high heat to caramelize the shallots and beef, extracting maximum flavor.
  2. Add Garlic and Herbs: Add garlic cloves and place hard herbs on top. Keep the heat on high.
  3. Add and Reduce Red Wine: Pour in the red wine and reduce it down until almost all liquid evaporates.
  4. Add Stocks and Simmer: Turn heat down slightly. Add 250 ml dark chicken stock and 600 ml reduced beef stock. Bring to a simmer to emulsify and blend flavors.
  5. Finish and Season: Squeeze out all flavors from the ingredients. Taste and adjust seasoning as needed.
  6. Emulsify with Butter: Add a few cubes of cold butter and emulsify into the sauce to give it a nice gloss and rich texture.
