  5. San Marzano tomatoes - 28 oz (28 oz can, hand-crushed)
  6. basil - watch the video to see (fresh, added at the beginning and more at the end for maximum flavor)
  7. olive oil - watch the video to see (extra virgin, for cooking and finishing)
  8. salt - to taste (to taste, added at the end)

Instructions

  1. Prepare the Aromatics: Peel the red onion and carrot. Leave them whole for infusion.
  2. Infuse the Olive Oil: Heat a stainless steel saucepan over medium-low heat. Add extra virgin olive oil and the smashed garlic cloves to infuse the oil.
  3. Add Tomatoes and Aromatics: Hand-crush the San Marzano tomatoes into the pan. Nestle the whole red onion, carrot, and Parmesan rind into the sauce. Add a portion of the basil.
  4. Simmer: Let the sauce simmer for 25 to 30 minutes, allowing the flavors to meld together.
  5. Season: After simmering, taste the sauce and season with salt as needed.
  6. Remove Aromatics and Finish: Remove and discard the onion, carrot, garlic, and Parmesan rind. Optionally, blend the sauce for a smoother texture. Add additional fresh basil for enhanced flavor.
  7. Serve: Serve the sauce over al dente pasta, finishing with a drizzle of extra virgin olive oil and freshly grated Parmesan cheese.
