Instructions

  1. Toast Spices: Toast cumin and coriander seeds in a hot, dry pan, then cool to room temperature before grinding.
  2. Grind Spices: Grind the toasted spices using a mortar and pestle or spice grinder. Add Mexican oregano if using, paprika, smoked paprika, cayenne pepper, and black pepper to complete the chili powder.
  3. Prepare Aromatics: Heat olive oil in a Dutch oven, add onion with salt to sweat, then add garlic, red bell peppers, and jalapeno.
  4. Bloom Chili Powder: Add the homemade chili powder to the pot, ensuring it does not burn.
