Instructions

  1. Prepare Pork Mince: Heat oil in a pan over medium heat. Add pork mince, season with a pinch of salt, and cook until it starts to develop some color. Break up the pork as it cooks.
  2. Add Aromatics: Add the grated garlic, ginger, and sliced spring onions to the pork. Stir and cook carefully to avoid burning.
  3. Deglaze and Season: Deglaze the pan with sake. Add chili bean sauce, dark miso, light miso, and a bit of white pepper. Stir to combine.
  4. Add Chicken Stock: Pour in chicken stock and bring to a simmer. Cook for about 20 minutes to combine flavors.
  5. Prepare Garnishes: Slice spring onion greens, cut nori sheets, and remove corn kernels. Set aside.
  6. Cook Noodles: Cook ramen noodles in boiling salted water for 2 minutes. Preheat serving bowls with a spoonful of noodle water.
  7. Assemble Ramen: Place noodles in the bowl, add pork, pour over the broth, and add garnishes: corn, spring onion greens, soy sauce egg, and nori.
