Ingredients

  1. chicken mince - 1 kg (use leg mince for juiciness)
  2. tender coriander stems - 1 heaped tbsp (finely chopped)
  3. onions - 2 medium (finely chopped)
  4. tomato - 1 large (seedless & finely chopped)
  5. green chillies - 3 (less spicy & finely chopped)
  6. ginger - 1 inch (peeled & finely chopped)
  7. fresh coriander leaves - 2 tbsp (finely chopped)
  8. whole egg - 1 (for binding)
  9. salt - watch the video to see (to taste)
  10. boiled eggs - 4 (for mixture)
  11. gram flour - 1 tbsp (for binding)
  12. oil - watch the video to see (for shallow frying)
  13. tomatoes - 1 large (sliced for garnish)
  14. onion - 1 large (for onion salad)
  15. roasted cumin - 1 tsp (crushed)
  16. lemon juice - 1 tsp (for onion salad)
  17. degi red chili powder - ½ tsp (for onion salad)
  18. onion - ½ medium (for green chutney)
  19. green chillies - 4 (for green chutney)
  20. fresh coriander leaves - ½ cup (for green chutney)
  21. fresh mint leaves - ¼ cup (for green chutney)
  22. tamarind pulp - 2-3 tbsp (for green chutney)
  23. ginger - 1 inch (peeled & sliced for green chutney)

Instructions

  1. Prepare Kebab Mixture: In a bowl, add chicken mince, tender coriander stems, onions, tomato, green chillies, ginger, fresh coriander leaves, whole egg, salt to taste, boiled eggs, and gram flour. Mix well.
  2. Shape Kebabs: Wet your hands with water, take a portion of the prepared mixture, place a tomato slice on one side, and shape it into a kebab.
  3. Cook Kebabs: In a pan, heat oil. Once hot, place the prepared kebabs and cook for 4-5 minutes until golden brown on both sides.
  4. Serve Kebabs: Transfer the kebabs to a serving platter, garnish with coriander sprig and pomegranate pearls. Serve hot with onion salad and green chutney.
  5. Prepare Onion Salad: In a bowl, mix sliced onion, roasted cumin, salt, lemon juice, and degi red chili powder. Set aside.
  6. Prepare Green Chutney: In a bowl, mix onion, green chillies, fresh coriander leaves, fresh mint leaves, tamarind pulp, salt, degi red chili powder, and ginger. Grind into a smooth paste.
