Instructions

  1. Caramelize cauliflower: Heat butter in a pan on high heat. Add finely sliced cauliflower and keep stirring and roasting to caramelize it, scraping the bottom to release fond. Cook for about 30 minutes until cauliflower is soft and caramelized.
  2. Add dairy to loosen: Add a touch of milk and a splash of cream to the caramelized cauliflower. Let it boil together briefly, then remove from heat.
  3. Blend puree: Slowly start blending the cauliflower mixture until smooth.
  4. Add secret ingredients: Add Parmesan cheese and Cabernet Sauvignon vinegar to the puree to thicken, emulsify, and enhance umami flavor.
  5. Strain puree: Pass the blended puree through a strainer for a smooth, rich texture.
