Ingredients

  1. cabbage - 300g (about ¼ head)
  2. cucumber - 1 (1 medium cucumber)
  3. chicken breast - 100g (boiled and shredded)
  4. chopped nuts - 40g (mixed nuts)
  5. dried cranberries - 30g (adds sweetness and texture)
  6. Parmesan cheese - 30g (grated)
  7. Greek yogurt - 100g (for dressing)
  8. whole grain mustard - 1 tbsp (for dressing)
  9. white balsamic vinegar - 1 tbsp (or lemon juice for dressing)
  10. Allulose syrup - 1 tbsp (or honey/oligosaccharide for dressing)
  11. salt - ½ tsp (to taste)
  12. pepper - a pinch (to taste)

Instructions

  1. Prepare Cabbage: Remove the outer leaves of the cabbage and soak in water for over 10 minutes, then rinse under running water.
  2. Boil Chicken: Boil the chicken breast in water for 15 minutes. Let it cool slightly, then shred into bite-sized pieces.
  3. Slice Cabbage: Remove the core of the cabbage and slice it thinly.
  4. Prepare Cucumber: Cut the cucumber in half lengthwise, remove the seeds, and dice into small cubes.
  5. Make Dressing: In a bowl, mix together all the dressing ingredients.
  6. Combine Ingredients: In a large bowl, combine the prepared cabbage, cucumber, shredded chicken breast, chopped nuts, and dried cranberries. Add the dressing and mix well.
  7. Finish Salad: Grate the Parmesan cheese over the salad and toss lightly.
  8. Serve: Plate the salad and enjoy. It can also be used as a sandwich filling.
