Instructions

  1. Prepare Fish and Shrimp: Cut curbina or tilapia fish into pieces and place in a container. Add peeled and deveined shrimp.
  2. Season the Mixture: Add oregano, complete seasoning, a little oil, Goya seasoning for color and flavor, Worcestershire sauce, and annatto paste. Add sour orange juice to enrich and add juiciness.
  3. Grind the Mixture: Grind the fish and shrimp mixture until combined well. No flour or eggs are added.
  4. Add Cheese and Form Burgers: Mix grated mozzarella cheese into the ground mixture. Form about six balls first, then shape into burgers using a mold and parchment paper for a professional round shape. Repeat to make about 18 burgers.
  5. Cook the Burgers: Cook burgers in an infrared oven for about 3 minutes per side until cooked through. Optionally, add a slice of cheese on top and bake for an additional 30 seconds.
  6. Prepare the Buns and Toppings: Heat the burger buns. Spread ketchup on the buns. Add tomato and onion slices on the cooked burgers.
  7. Cook the Fries: Cook potatoes in an air fryer with a few drops of oil until crispy and golden.
