  6. Kashmiri chili powder - 1 tablespoon
  7. black pepper - watch the video to see (loaded tablespoon)
  8. salt - to taste
  9. coconut oil - watch the video to see
  10. red onion - 1
  11. Madras curry powder - watch the video to see (blackened)
  12. lemongrass - 1 (chopped)
  13. green chili - watch the video to see (halved)

Instructions

  1. Marinate the Pork: Combine pork with tamarind, vinegar, ginger, garlic, turmeric, chili powder, black pepper, and salt. Marinate for 4 hours to overnight.
  2. Prepare the Base: In coconut oil, sweat red onion, add blackened curry powder, lemongrass, green chili, curry leaves, and pandan leaves. Toast spices.
  3. Cook the Curry: Add marinated pork to the base, cover with water, and simmer for about 1.5 hours until pork is tender.
  4. Finish and Serve: Finish with lime juice and serve.
