Instructions
Marinate the Pork: Combine pork with tamarind, vinegar, ginger, garlic, turmeric, chili powder, black pepper, and salt. Marinate for 4 hours to overnight.
Prepare the Base: In coconut oil, sweat red onion, add blackened curry powder, lemongrass, green chili, curry leaves, and pandan leaves. Toast spices.
Cook the Curry: Add marinated pork to the base, cover with water, and simmer for about 1.5 hours until pork is tender.
Finish and Serve: Finish with lime juice and serve.
