Ingredients

  1. chicken breast - 500 g (cleaned from bones and fat, cut into pieces)
  2. salt - 1 teaspoon (for seasoning)
  3. bread crumb (mollica di pane) - 200 g (soft bread crumb)
  4. sweet paprika - 1 teaspoon (for flavor)
  5. onion powder - 1 teaspoon (for flavor)
  6. garlic powder - 1 teaspoon (for flavor)
  7. extra virgin olive oil - 20 g (to add moisture)
  8. semolina flour - 100 g (for coating)
  9. eggs - 3 (beaten, for coating)
  10. bread crumbs (pangrattato) - 100 g (for coating)

Instructions

  1. Prepare the chicken mixture: Clean the chicken breast from bones and fat, cut into pieces and place in the blender bowl with blades. Add bread crumb (mollica di pane), salt, sweet paprika, onion powder, garlic powder, and extra virgin olive oil.
  2. Blend the mixture: Blend all ingredients until well combined. Refrigerate the mixture for 10 minutes to firm up.
  3. Form nuggets: Shape the mixture into nuggets of about 20 grams each. This recipe yields approximately 16 nuggets.
  4. Prepare coating: Set up three bowls for coating: one with semolina flour, one with beaten eggs, and one with bread crumbs (pangrattato).
  5. Coat the nuggets: Dip each nugget first in semolina flour, then in beaten eggs, and finally in bread crumbs to coat evenly.
  6. Cook in air fryer: Preheat the air fryer to 180°C. Place the nuggets in the air fryer basket and cook for 14 minutes, turning them halfway through cooking.
