  4. cloves - 1 teaspoon (whole or ground)
  5. pimenta (allspice) - 1 teaspoon (ground)
  6. anise seed - 1 teaspoon (whole or ground)
  7. olive oil - 2 tablespoons (for marinade)
  8. vinegar - 2 tablespoons (or juice of lime/lemon to tenderize)
  9. smoked paprika - 1 teaspoon (or substitute with grilled red pepper blended)
  10. salt - to taste (to be added just before grilling)

Instructions

  1. Prepare the marinade: In a bowl, combine ginger, African nutmeg, cloves, pimenta, anise seed, olive oil, vinegar (or lime/lemon juice), and smoked paprika. Mix well to create a dry rub marinade.
  2. Marinate the chicken: Rub the marinade thoroughly onto the chicken legs, ensuring all parts are well coated. Avoid adding salt at this stage. Let the chicken marinate for at least 1 hour to absorb the flavors.
  3. Preheat the oven grill: Preheat your oven grill to 200°C (392°F).
  4. Grill the chicken: Place the marinated chicken legs under the grill for 15 minutes at 200°C. Then reduce the temperature to 175°C (347°F) and grill for an additional 15 minutes. Just before placing under the grill, sprinkle salt to taste.
  5. Rest and serve: Once grilled, let the chicken rest briefly before serving. The chicken should be crispy on the outside and moist inside with aromatic and spicy flavors.
