Instructions

  1. Marinate the Pork: Slice pork into strips and marinate with cornstarch, oyster sauce, soy sauce, white pepper, and water.
  2. Prepare the Vegetables: Dice the green parts of green onions, dice the shallots, then dice the garlic. Cut the cucumber into sections, remove the watery core, then slice thinly.
  3. Make the Sauce: Mix together red vinegar, white rice vinegar, hoisin sauce, ground bean sauce, tomato sauce, sugar, and water.
  4. Cook the Noodles: Boil noodles until just done, dunk in ice water, then briefly return to hot water. Drain and add some oil to loosen them.
  5. Stir-Fry the Pork: In a hot wok with oil, add the pork, followed by the shallots and garlic, stir-frying together. Splash in cooking wine to enhance flavor.
  6. Finish the Sauce: Add the sauce to the wok, bring to a boil, and then thicken with potato starch. Finish with some sesame oil.
  7. Assemble the Dish: Pour the meat sauce over the noodles, garnish with cucumber and green onion, and serve.
