Instructions
- Prepare the Filling: Combine caramelized bacon, braised chicken gizzards, confit chicken hearts, and rich chicken stock. Finish with fresh chives.
- Prepare Chicken Oysters: Roast chicken oysters until crispy and glaze with chicken gravy. Finish with fresh chives.
- Prepare the Chicken Head: Stuff the chicken head with chicken mousse, steam, then sear off to caramelize the skin.
- Assemble the Pie: Layer the prepared filling in the pie dish. Add roasted chicken oysters and additional bacon. Cover with pastry, apply egg wash, and insert the stuffed chicken head through the pastry.
- Bake: Bake at 180°C (356°F) for about 25 minutes.
