Ingredients

  1. egg white - 1
  2. shaoxing wine or mirin - 2 teaspoons
  3. sesame oil - 1 teaspoon
  4. kosher salt - 1/2 teaspoon
  5. white pepper - 1/2 teaspoon
  6. cornstarch - 2 teaspoons
  7. MSG - a pinch (a pinch)
  8. chicken breast - watch the video to see (thinly sliced)

Instructions

  1. Prepare the velveting mix: In a bowl, combine 1 egg white, 2 teaspoons of shaoxing wine or mirin, 1 teaspoon of sesame oil, 1/2 teaspoon of kosher salt, 1/2 teaspoon of white pepper, 2 teaspoons of cornstarch, and a pinch of MSG. Mix well.
  2. Velvet the chicken: Thinly slice some chicken breast and add it to the velveting mix. Ensure the chicken is well coated and let it sit for 20 minutes.
  3. Cook the chicken: Blanch the chicken in boiling water for 45 seconds. Alternatively, you can blanch it in hot oil.
  4. Finish the dish: After blanching, the chicken can be added to any dish and cooked for a couple of minutes before adding the desired sauce to finish.
