Ingredients

  1. Yukon gold potatoes - 2 lbs
  2. salt - 1 tbsp (for boiling water)
  3. salt - 1-2 tsp (for mixing)
  4. whole milk - 1 1/4 cups (for mashed potatoes)
  5. unsalted butter - 4-6 tbsp (for mashed potatoes, adjust to taste)
  6. unsalted butter - 2 tbsp (for cheese sauce)
  7. all-purpose flour - 2 tbsp
  8. whole milk - 1 1/3 cups (for cheese sauce)
  9. fontina cheese - 3 1/2 oz
  10. Gruyère cheese - 3 1/2 oz

Instructions

  1. Prepare Potatoes: Roast or boil Yukon gold potatoes. For roasting, preheat oven and roast until tender. For boiling, cook in salted water until fork tender.
  2. Mash Potatoes: Strain and press the potatoes through a ricer into a bowl.
  3. Mix Dairy: Add salt, butter, and milk to the mashed potatoes and mix well.
  4. Make Cheese Sauce: In a pan, melt butter and stir in flour. Cook on low heat for 5 minutes. Gradually add milk, stirring until thickened. Add grated Gruyère and Fontina cheeses until melted and smooth.
  5. Combine and Bake: Place mashed potatoes in a baking dish, pour cheese sauce over, and spread evenly. Broil until golden and bubbly. Finish with fresh cut chives.
  6. Serve: Serve the ultimate mashed potatoes hot.
