Instructions
Prepare Potatoes: Roast or boil Yukon gold potatoes. For roasting, preheat oven and roast until tender. For boiling, cook in salted water until fork tender.
Mash Potatoes: Strain and press the potatoes through a ricer into a bowl.
Mix Dairy: Add salt, butter, and milk to the mashed potatoes and mix well.
Make Cheese Sauce: In a pan, melt butter and stir in flour. Cook on low heat for 5 minutes. Gradually add milk, stirring until thickened. Add grated Gruyère and Fontina cheeses until melted and smooth.
Combine and Bake: Place mashed potatoes in a baking dish, pour cheese sauce over, and spread evenly. Broil until golden and bubbly. Finish with fresh cut chives.
