Ingredients

  1. tofu - 1 block (1 block, cut into 5cm squares)
  2. ground beef - 100 g (finely chopped)
  3. shiitake mushrooms - 2 pieces (remove stems and finely chop)
  4. seaweed sheet (gim) - 1 sheet (1 sheet to wrap tofu sandwich)
  5. green onion - 1/2 stalk (half, cut into thin 6cm strips and soaked in cold water)
  6. cornstarch - 3 tablespoons (for coating tofu)
  7. cooking oil - about 1 tablespoon (for frying)
  8. salt - to taste (for seasoning tofu)
  9. black pepper - to taste (for seasoning tofu and filling)
  10. soy sauce (for filling) - 1 tablespoon (for mixing with beef and mushrooms)
  11. sugar (for filling) - 1/2 tablespoon (for mixing with beef and mushrooms)
  12. minced garlic (for filling) - 1 teaspoon (for mixing with beef and mushrooms)
  13. water (for braising sauce) - 2 tablespoons (for simmering tofu)
  14. soy sauce (for braising sauce) - 1 tablespoon (for simmering tofu)
  15. cooking wine (mirin or similar) - 1 tablespoon (for braising sauce)
  16. sugar (for braising sauce) - 1/2 tablespoon (for braising sauce)
  17. minced garlic (for braising sauce) - 1 teaspoon (for braising sauce)
  18. sesame oil - 1/2 tablespoon (for braising sauce)

Instructions

  1. Prepare tofu: Cut tofu into approximately 5cm squares. Lightly season with salt and black pepper.
  2. Prepare green onion: Cut green onion into thin strips about 6cm long, soak in cold water, then drain.
  3. Prepare filling: Remove stems from shiitake mushrooms and finely chop. Mix chopped mushrooms with ground beef and filling seasoning ingredients (soy sauce, sugar, minced garlic, black pepper).
  4. Assemble tofu sandwich: Drain tofu well, coat evenly with cornstarch. Layer tofu - filling - tofu, then wrap the middle with a sheet of seaweed to secure.
  5. Mix braising sauce: In a bowl, combine water, soy sauce, cooking wine, sugar, minced garlic, sesame oil, and black pepper.
  6. Cook tofu sandwich: Heat a pan with cooking oil, fry the tofu sandwich until golden brown on both sides. Pour in the braising sauce and simmer for about 2 minutes until sauce thickens.
  7. Serve: Plate the tofu sandwich jorim and garnish with the prepared green onion strips.
