Instructions
Preparation: Salt the steak at least 45 minutes before cooking, or even one to two days in advance for better flavor and moisture control.
Preheat Pan and Oil: Heat a cast iron pan on high and add avocado oil, heating it to about 400°F.
Sear the Steak: Place the steak in the hot pan, searing it without moving for a good crust formation. Flip and repeat on the other side.
Finish Cooking in Oven: If the steak is thick, finish cooking in the oven at a moderate temperature to avoid burning the outside while ensuring the inside is cooked to your liking.
Rest the Steak: Let the steak rest for at least 10 minutes after cooking to allow the juices to redistribute.
