Ingredients

  1. dashi - 1 and 1/4 cups (good quality)
  2. flour - 1 and 1/2 cups
  3. eggs - 3
  4. octopus - watch the video to see (cut into pieces)
  5. green onion - watch the video to see (chopped)
  6. takoyaki sauce - to taste
  7. mayonnaise - to taste
  8. seaweed flakes - to taste
  9. bonito flakes - to taste

Instructions

  1. Prepare the batter: Combine 1 and 1/4 cups of dashi, 1 and 1/2 cups of flour, and 3 eggs in a mixing bowl.
  2. Heat the takoyaki pan: Heat your takoyaki pan on medium heat. This may take a minute as the pan is made out of cast iron.
  3. Fill the pan: Fill the pan all the way with the batter. Add a piece of octopus and some green onions to each ball.
  4. Cook the takoyaki: With patience, turn the takoyaki balls as they cook. This will take about 6 minutes.
  5. Add toppings: Cover the cooked takoyaki with takoyaki sauce, mayonnaise, seaweed flakes, and a generous amount of bonito flakes.
