Ingredients

  2. water - 900 grams (room temperature)
  3. sourdough starter - 100 grams
  4. salt - 20 grams

Instructions

  1. Mix Ingredients: Homogenize bread flour, water, sourdough starter, and salt until well combined.
  2. Prepare for Fermentation: Transfer the mixture into a greased loaf pan. Optionally, extract a small sample to monitor the fermentation progress or simply eye-ball a 100% size increase of your dough in the pan.
  3. Bake: Cover and bake in a non-preheated oven at 230°C (446°F). Initially, bake with the lid on until the core temperature reaches 80°C (176°F), then remove the lid and continue baking until the core temperature reaches 95°C (203°F).
