Ingredients

  1. eggplants - 7 (peeled)
  2. salt - watch the video to see (to sprinkle on eggplants)
  3. onions - 2 (cut into wedges)
  4. bell pepper - 3 (sliced, seeds removed)
  5. hot pepper - 1 (optional)
  6. tomatoes - 4 (cut into cubes)
  7. garlic - 1.5 heads (crushed)
  8. dried coriander - 1 tablespoon (for seasoning)
  9. cumin - 0.5 tablespoon (for seasoning)
  10. paprika - 0.5 tablespoon (for seasoning)
  11. vegetable oil - 0.5 cup (for frying)
  12. water - 1 cup (to add to sauce)
  13. olive oil - 3 tablespoons (to add to sauce)
  14. parsley - watch the video to see (for garnish)

Instructions

  1. Prepare Eggplants: Peel the eggplants and sprinkle with salt. Let them sit for a few minutes.
  2. Prepare Vegetables: Cut onions into wedges, slice bell peppers and hot pepper, and cube the tomatoes.
  3. Crush Garlic: Crush garlic with a little salt and mix with coriander, cumin, and paprika.
  4. Stuff Eggplants: Stuff each eggplant with the prepared mixture.
  5. Fry Eggplants: Heat vegetable oil in a pan and fry the stuffed eggplants until they are golden.
  6. Cook Vegetables: In the same pan, add onions, bell peppers, and hot pepper. Stir for 3 minutes.
  7. Add Tomatoes: Add cubed tomatoes and a pinch of salt. Cook until tomatoes release their water.
  8. Prepare Sauce: Add water and olive oil to the pan, cover, and let simmer for 5 minutes.
  9. Combine Eggplants and Sauce: Place the stuffed eggplants in the sauce and cover. Cook for 7 minutes.
  10. Garnish and Serve: Sprinkle with parsley and serve hot or cold.
