Ingredients

  1. potatoes - 500g (peeled and cut)
  2. onion - 400g (cut)
  3. green chillies - 2-3 (sliced)
  4. fresh coriander - 1/2 cup (chopped)
  5. Himalayan pink salt - 1/2 tablespoon (or to taste)
  6. gram flour (baisan) - 2 cups
  7. cumin seeds - 2 teaspoons (roasted and crushed)
  8. coriander seeds - 2 teaspoons (roasted and crushed)
  9. red chilli - 1 teaspoon (crushed)
  10. turmeric powder - 1/4 teaspoon
  11. tandoori masala - 1 tablespoon
  12. baking soda - 1/2 teaspoon
  13. chicken powder - 1/2 tablespoon
  14. dried fenugreek leaves (kasuri methi) - 2 teaspoons
  15. water - 1/2 cup (or as required to make batter)

  17. chaat masala - watch the video to see (for sprinkling)

Instructions

  1. Prepare vegetables: Cut potatoes and onions into small pieces.
  2. Mix vegetables and salt: In a bowl, add potatoes, onions, green chillies, fresh coriander, and Himalayan pink salt. Mix well, cover, and let it rest for 15 minutes.
  3. Add dry ingredients: Add gram flour, roasted and crushed cumin seeds, roasted and crushed coriander seeds, crushed red chilli, turmeric powder, tandoori masala, baking soda, chicken powder, and dried fenugreek leaves to the vegetable mixture. Mix well.
  4. Make batter: Gradually add water and mix well to make a thick batter.
  5. Fry pakoras: Heat cooking oil in a wok on medium flame. Fry spoonfuls of the batter until golden and crispy.
  6. Serve: Sprinkle chaat masala on the pakoras and serve hot with chutney.
