  1. Brioche burger buns - as needed
  2. Ground beef - as needed
  3. Pickles - 1 tablespoon (chopped)
  4. Blue cheese - as needed
  5. Mature cheddar - as needed
  6. Parmesan or another hard cheese - as needed
  7. Thinly sliced raw onions - as needed
  8. Mayonnaise - 6 tablespoons
  9. Sriracha - 1 tablespoon
  10. Ketchup - 1 tablespoon
  11. Chopped jalapeños - 1 tablespoon
  12. Black pepper - 1 teaspoon
  13. Onion powder - 1 teaspoon
  14. Smoked paprika - 1 teaspoon

Instructions

  1. Prepare the patties: Form ground beef into patties to fit the buns. Season with salt and pepper. Cook on a dry, hot pan or grill until juicy but cooked to your preference. Place the cheeses on each patty in the last few minutes of cooking to melt.
  2. Make the spicy sauce: Mix mayonnaise, sriracha, ketchup, chopped jalapeños, and chopped pickles. Season with black pepper, onion powder, and smoked paprika to taste.
  3. Assemble the burger: Halve the buns and lightly toast the insides on the pan or in the oven. Spread a generous layer of spicy sauce on the bottom bun, add the beef patty, a layer of thinly sliced raw onions, and pickles. Top with another layer of sauce and the top bun. Serve immediately.
