Ingredients

  1. flour - 450g (all-purpose flour)
  2. salt - 1.5 tsp (fine salt)
  3. water - 250g (lukewarm water)
  4. sugar - 2.5 tbsp (granulated sugar)
  5. instant yeast - 2¼ tsp (active dry or instant yeast)
  6. flour - 2 tbsp (for dusting)
  7. extra virgin olive oil - 2 tsp (for dough and brushing)

Instructions

  1. Prepare the Dough: Combine the flour, salt, sugar, and instant yeast in a mixing bowl. Gradually add the lukewarm water and olive oil, mixing until a dough forms.
  2. Knead the Dough: Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  3. First Rise: Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
  4. Shape the Pitas: Divide the dough into equal portions, roll each into a ball, then flatten into discs about 1/4 inch thick.
  5. Second Rise: Let the discs rest for 20-30 minutes to puff up slightly.
  6. Cook the Pitas: Cook the pitas in an air fryer or on a hot skillet until they puff up and develop a crisp exterior, about 3-5 minutes per side.
  7. Cool and Serve: Remove from heat and let cool slightly before serving. Use for stuffing or dipping.
