Ingredients

  1. all-purpose flour (type 0) - 500 g (for the dough)
  2. water - 275 g (added all at once to the flour)
  3. extra virgin olive oil - 20 g (for the dough)
  4. instant yeast for savory preparations - 15 g (for the dough)
  5. fine salt - 10 g (for the dough)
  6. extra virgin olive oil - 80 g (for cooking the bread in the pan)

Instructions

  1. Prepare the dough: In a bowl, add the flour. Pour in the water all at once, then add salt, instant yeast, and finally the olive oil. Mix everything with a spatula or wooden spoon.
  2. Knead the dough: Continue kneading with your hands until the dough is smooth and no longer sticky. Transfer it to a work surface and form a smooth ball.
  3. Divide and shape dough balls: Divide the dough into eight equal parts. For each piece, shape it into a ball by bringing the edges to the center and twisting with the inside of your hand.
  4. Rest the dough balls: Place the dough balls under tea towels and let them rest for 5 minutes.
  5. Roll out the dough: Lightly flour the surface and roll each dough ball into a circle about 20 cm in diameter and 0.5 cm thick. If the dough shrinks back, set it aside and roll another piece.
  6. Cook the bread: Heat a non-stick pan with some olive oil. Place the rolled dough in the pan, cover with a lid leaving a small vent, and cook for 3-4 minutes on one side until bubbles form on the surface. Flip the bread, cover again with the lid and cook for another 3 minutes until golden brown on both sides.
  7. Serve: Remove the bread from the pan and serve warm. The bread is soft inside and fragrant outside.
