Ingredients

  1. oil - 1 tablespoon
  2. butter - 1 tablespoon
  3. tomatoes - 4 (peeled and finely chopped)
  4. onion - 1 medium (preferably white, finely chopped)
  5. green pepper - 1/2 cup (or 2 hot peppers, chopped)
  6. eggs - watch the video to see (as desired)
  7. salt - a pinch
  8. black pepper - a pinch
  9. tomato paste - 1 tablespoon
  10. sugar - a pinch (a very small pinch)
  11. parsley - a sprinkle (for garnish)

Instructions

  1. Prepare the tomatoes: Make a plus sign on the top of each tomato. Boil in water for one minute, then cool and peel.
  2. Chop vegetables: Finely chop the peeled tomatoes and onion. Cut the hot pepper into rings or small cubes if using regular peppers.
  3. Sauté onions and peppers: In a wide pan, heat oil and butter. Add onions and cook for about 30 seconds. Add peppers and stir.
  4. Add tomato paste and sugar: Sauté a tablespoon of tomato paste and a pinch of sugar quickly.
  5. Cook tomatoes: Add the chopped tomatoes, reduce heat, and cook for five minutes.
  6. Season: Season with a pinch of salt and black pepper.
  7. Add eggs: Add eggs according to preference, mixing some into the tomatoes and leaving some whole.
  8. Garnish and serve: Garnish with a sprinkle of parsley before serving.
