Ingredients

  2. bell peppers - 2-3 (preferably padron peppers from Spain)
  3. tomatoes - 400 grams (sun-ripened, San Marzano or similar)
  4. olive oil - 2 tablespoons (extra virgin)
  5. butter - 1 tablespoon
  6. tomato paste - 1 tablespoon (for enhanced umami)
  7. paprika - 1 teaspoon (sweet)
  8. black pepper - to taste
  9. salt - to taste
  10. sugar - a pinch (a pinch, optional)
  11. garlic - 1 clove (grated, optional)
  12. water - 1/2 deciliter (for adjusting consistency)
  13. eggs - 4-10, as preferred

Instructions

  1. Prepare the Vegetables: Slice the onion finely. Cut the peppers on one side, turn over, and cut again. Chop the tomatoes finely.
  2. Cook the Onion and Peppers: Heat olive oil and butter in a pan. Add the onion and cook until caramelized. Add the peppers and cook until they get a dark color.
  3. Add Tomatoes and Spices: Add the tomatoes, tomato paste, paprika, black pepper, salt, and optional sugar and garlic. Cook until the tomatoes break down into a thick sauce.
  4. Finalize the Menemen: Create indentations in the sauce and crack the eggs into the pan. Stir gently to scramble the eggs with the sauce until just set. Season to taste with salt and pepper.
  5. Serve: Serve hot with bread or as part of a larger Turkish breakfast spread.
